Ingredients
- 6 carrots – shredded
- 1 shallot – sliced
- ½ cup celery – chopped
- 1 teaspoon cumin
- ½ teaspoon honey
- 1 lemon juiced
- 2 tablespoons extra virgin olive oil
- Pinch of sea salt and black pepper
Directions
- Combine all ingredients in a bowl and mix together.
Suggestion – chickpeas are a great addition. If added, you might want to add a little more dressing, as they tend to soak up some of the liquid.
