Sunset Salad Dressing
This is our absolute favorite salad dressing. This is also our most requested salad dressing from our friends that come over for dinner.
The star of this dressing is definitely Turmeric. Turmeric is a spice with a powder-like consistency, deep yellow-orange color and has a very unique taste. It is widely used as medicine throughout Asian to treat a number of chronic illnesses and aliments, as it’s very well known for it’s powerful anti-inflammatory properties.
Ingredients
- 2 cups salad greens
- 1 cup crunchy veggies – carrots, onions, cucumbers
- ½ tomato chopped/diced
- 1/2 avocado chopped – optional, but delicious
If you are looking to make this more of a meal, then: chicken or salmon, chickpeas and/or quinoa are also delicious additions with this dressing.
For the dressing
- 2 tablespoons extra virgin olive oil
- 2 teaspoons white balsamic vinegar
- 1 teaspoon turmeric
- Pinch of sea salt and fresh black pepper
Directions
Chop and place all salad veggies in a bowl. To mix the dressing you can actually all of the dressing ingredients right into the salad – oil, vinegar, turmeric, salt and pepper – then, mix all ingredients together.
*adjust seasonings as needed. If you like your dressing with a little more vinegar flavor, then you might want to add an additional teaspoon of the white balsamic. The oil and vinegar really help to bring out the flavor in the turmeric.
The dressing will give the entire salad an orange sunset color 🙂
